What are you cooking this Memorial Day Week-end?

I slow smoked (with green hickory) some spare ribs over a corned beef loin. I took the ribs off the smoker and browned them on the BBQ grill smothered in Sweet Baby Ray's BBQ sauce until they looked like I like em. I also grilled some fresh zuccini squash at the same time. While all this was going on I had some small new potatoes boiling that I later soaked in butter and garlic salt. Also happening was baked beans with fresh cut up sweet onions, ground deer meat and sliced deer sausage, Cajun seasoning, bell peppers, topped with bacon strips. Had everybody over today because the SIL has to work tomorrow.

The corned beef will be cut up and cooked tomorrow with a fresh head of cabbage, cooked in chicken broth, with deer sausage, fresh onions, and a proper seasoning. Leftovers for most of the rest of the week.

I've got a pork loin coated with smokey paprika chipotle seasoning in a plastic bag in the fridge. Gonna grill that up with some Sweet baby Rays hickory brown sugar barbecue sauce. Then I'll throw some ears of corn on the grill with it, and finish up with some rice or pasta. Of course all this will be washed down with prickly pear margaritas!

Grilled a large sirloin and some Hilshire beef Kilbosa. Boiled fresh white corn on the cob, baked potatoes. Watermellon for dessert.
Tomorrow, we will visit Outback.

Good to read of these celebrations... Here in upstate NY it was a beautiful Sunday with tenderloin steaks on the grill, sauteed mushrooms, 'best' potato salad and asparagus, all lubricated with fielder's choice of margaritas, cabernet, vodka 'n tonic...followed by lemon cake and good conversation.

Today will be lighter fare!

Regards,

Dyson
