Another use for bell peppers. They are athe peak of their season. Here’s how I do ‘em.
You will need:
. 8 bell peppers. They should be square with 4 points on the bottom so they will stand upright. I like to mix up the colors for eye appeal.
. 1 pound lean ground beef.
. 1 packet of Success rice.
. 2 cans Hunts tomato sauce.
. Salt and black pepper to taste.
. 1/4 cup chopped celery
. 1/4 cup chopped onion
Cut tops out of peppers and scoop out seeds. Crumble and brown meat. Cook rice. Combine all I ingredients in mixing bowl using 1&1/2 cans of tomato sauce.
Scald the peppers for 2 minutes in boiling water. Peppers will cook up tender.
Fill peppers with the mix and top them off with remaining tomato sauce.
Bake in 375 deg. oven for 30 to 35 minutes.
