Stuffed peppers

Another use for bell peppers. They are athe peak of their season. Here’s how I do ‘em.
You will need:
. 8 bell peppers. They should be square with 4 points on the bottom so they will stand upright. I like to mix up the colors for eye appeal.
. 1 pound lean ground beef.
. 1 packet of Success rice.
. 2 cans Hunts tomato sauce.
. Salt and black pepper to taste.
. 1/4 cup chopped celery
. 1/4 cup chopped onion

Cut tops out of peppers and scoop out seeds. Crumble and brown meat. Cook rice. Combine all I ingredients in mixing bowl using 1&1/2 cans of tomato sauce.

Scald the peppers for 2 minutes in boiling water. Peppers will cook up tender.

Fill peppers with the mix and top them off with remaining tomato sauce.

Bake in 375 deg. oven for 30 to 35 minutes.

We have stuffed green peppers frequently. Back in my Southern Ohio childhood, almost everyone called green bell peppers "Mangoes", including my mother. A local thing I suppose, I've never heard them called that anywhere else..
 
Alternative:

50/50 mixture of spicy Italian sausage and ground beef, browned in a skillet with the diced onions and spices.

Fill the pepper halves, lay them out in a baking dish, sprinkle on shredded mozzarella cheese.

Cover with spaghetti sauce, your choice of spicing (I like garlic and mushroom).

Sprinkle with Romano and Parmesan cheeses.

Bake in oven for 35-40 minutes at 350F.

Serve with garlic toast and a salad of fresh cucumbers and onions marinated in Italian vinaigrette dressing.

Accept the praises of your dinner guests, retire to your recliner while others do the dishes.
 
I peel the thin outer clear skin layer off the peppers after the blanching step.

From the shared recipes it looks like we would all be right at home dining at each others homes.
 
Good lookin' dinner WJ! Equally good with ground turkey. I drizzle a bit of Italian dressing on top before cooking. Actually you can easily trim the bottom slightly to sit more stable, just don't create a leaker!:)
 
I did not know this till the other day. Your recipe calls for 4 point peppers. Those are female and 3 point are male. Females have more seeds but are sweeter.

Total balderdash. Internet myth that I believed until just a few minutes ago after googling it. So....do I believe this fact learned from the internet or believe the internet that says it is a myth. Internet is two faced pony soldier speaking with forked tongue
