I love to cook on my smoker and I do it mostly in the spring and fall when the outside temps are more moderate. As late summer temps are starting to ebb a bit I've been firing started back to firing up the smoker on weekends.
Baked beans are one of the best side dishes to accompany your BBQ spread. They pair well with smoked meats, but one of the best things about baked beans with BBQ is how well they take on smoke.
I tried out a new baked bean recipe this weekend and I'm telling you they were smack your momma good. I like mine just a bit spicy and these had just the right kick.
I like using an iron skillet for mine, but a foil pan will do the job too. I soaked the beans overnight, then dumped them and my ingredients in on top of them in the skillet.
I also added some freshly fried and crumbled bacon and some finely chopped pork belly burnt ends to the mix and got it all stirred up. I was already using hickory chips to smoke some ribs, but most any kind of smoking wood works for beans.
An hour and a half to two hours later they are ready to serve. I could just about make a meal out of these all by themselves.
