I like prime Ribeye but I would like to try that Kobe beef.
Fat makes it taste good. :)

I am a NY strip steak guy. Always have been. Got 2 Choice NY strips from the butcher the other day - they were tasty. I got a ribeye for my wife. Like them cut thick and med rare. Melt in your mouth like butter. When I was a kid my dad and I would go down to a farmer he knew and pick the angus cow we wanted. He would transport it to the local butcher shop. My dad gave the instructions for butchering and a couple of weeks later we were filling the freezer with fresh butchered beef. Not sure who got the other half since we always got a side not the whole cow.
 
I like steaks but I think that the NY is a poor mans steak that is seldom tender and also has less flavor with the fat structure.

T bone is ok, rib is better and FM is king for tenderness and flavor if aged.

However a old Chuck steak soaked in red wine over night and put on the BBQ is not to shabby for a low cost meal, even if it looks "Purple".
 
Bone-in, dry aged ribeye....

Medium Rare with black truffle, shallot, and thyme compound butter....

Skillet fried new potatoes and brown sugar, curry corn on the side...

Served with a bottle of 2005 Chateau Pontet Canet....
 
NY Strips are terrific - we usually get Prime. Sometimes we get a few Prime Porterhouse or Filet Mignon's as well. While the Filet's are the most tender - they just can't match the NY Strips for flavor IMHO.

BTW for those who don't know - Costco has absolutely excellent steaks!!! BTW if at Costco, get some Peter Luger's Creamed Spinach too.
