My best and I like the old westerns, is the 1950 Winchester 73 with James Stewart. And I like the 1941 Sergeant York with Gary Cooper. If you haven't seen these try hard to see them this holiday. Great movies.

hard to choose "1", but for westerns I can watch Open Range over and over. Even in its quiet moments it can be powerful.

And Saving Private Ryan, obviously very intense.

I'm older and grew up with many classics, but these days prefer more modern film-making (and not much for b&w anymore).
 
Patton, Saving Private Ryan a close second
Butch Cassidy with High Noon a close second
 
For military I'll go with "Patton". Others would be "Twelve O'Clock High" and "Saving Private Ryan". There are many more, but these stand out.
 
There are many good movies in these two categories...and many have already been mentioned...but for my two personal top favorites, I'd say The Shootist and Saving Private Ryan.
