Just curious what makes an 11 degree crown so desireable and "perfect"? Why is 10 degrees not enough and 12 degrees too much? How does this affect accuracy?

I heard that somebody took photos of the muzzle blast and the edge of the gas jet was about 79° from the axis of the barrel. So what. I fail to see what that has to do with anything. Besides most bench rest rifles use a 0°(flat) crown. 11° sounds hi-tech and precise to the average novice, allowing gunsmiths to sound smarter and improves their profit margin a bit, I suspect.

I personally feel its more a matter of how square, and centered, the crown is cut in regards to the bore, then it is a matter of degrees.
 
The main thing is that there are no nicks or dings at the muzzle exit - that will make accuracy suffer. What you cut them out with is pretty much a personal choice. The most damage resistant crown is a square-edged counterbore.
