Another pet peeve...

Just say "No garnish." No hay problema . . .

Erich -

Actualmente, "garnish" is not always synonymous with "lettuce" in many parts. Tomatoes and even sometimes chopped onions are also used by some Mexican restaurants. I love chopped tomatoes as a garnish for tacos, and chopped onions are an extra bonus when provided.

It's just the lettuce that I find annoying. It's also really upsetting to me when I order sour cream on the side, and they plop a dollop of it on a bed of shredded lettuce. Then you have to pick the lettuce out of the sour cream, which is the only thing I specified. I guess I'm a purist at heart.

And by the way, if your wife was responsible for those red enchiladas you posted, you are probably one of the luckiest men on the face of the earth! Can't wait to get together with you next time we hit Albuquerque!

Best,
John

My son is particular and never wants lettuce. He nearly always gets lettuce. Mine is Waffle House. What is hard to understand about "Bacon and Egg sandwich on untoasted plain white bread with nothing on it? It comes toasted. It comes with mayonaise, it comes with pickles. Sometimes they are considerate enough to put a package of mayo with it, and since I don't want it I don't have to use it.

Have your son watch this. Old school method to get exactly what you want.

Not sure about this......

Not having been to Japan myself, but I understand that they really frown on changing menu items. To them, the way they have it on the menu is the way it is SUPPOSED to be and you are just messing things up by leaving out something like lettuce.

I don't get that deep with food. I like it, I eat it. Don't care if there is an extra ingredient or one missing. A hard shell taco is actually not traditional.

Neither is a burrito--its a Texan invention.

OOOOOHHHHHHH!!! Cuban food. Now yer cookin'! There was a great Cuban cafe around the corner from the court house in Down Town Houston and anytime I was on Jury duty I'd get there in plenty of time to get me a nice breakfast before going in.

Too old for Jury duty any more and now that I am I never have any reason to go down town but if I ever do I will try to squeeze in a side trip to that place. It was awesome...

We dont have any Cuban food here--but id sure like having one of their pork sandwiches smother in juice.

If I was told that my daily bread could only come in one form, it would be the tortilla.

OR from my Kolachis or banana nut muffins. Ive given out hundreds of each--never had any returned. This Friday, ill be baking 16 for Noemi and Melinda.

My mother taught me always to eat my vegetables, so I guess I don't mind a little lettuce on the side. It gives texture to the rice and beans. I don't mind some crema, pico, tomato or even avocado. But I don't want any of that stuff in a taco. No ground beef, either.

A good taco is a couple of small corn tortillas wrapped around some well-seasoned meat, with a little cilantro, chopped onion, salt, lime and some good hot salsa (alternated with a nice tomatillo salsa). The meat can be marinated pork (al pastor, my favorite), carnitas, lengua, sesos, buche, carne asada, maybe pollo, I usually stick to the pork variants, and stay from the brains.

I like lettuce in my pozole, but only if I don't have cabbage. A lot of places like to serve tostadas with their pozole; the crema always gets in my mustache and drives me nuts. Bean tostadas are lame, anyway. Tinga de pollo is the only way to go.

There is really no need to go to Texas for Mexican food. Los Angeles, Colorado, New Mexico and Minnesota all have plenty, plenty good. Nothing I ever had in Texas was any better.

Anywhere but border state version of Mex is just imitation, here in Teexas it's the REAL DEAL.:D

I never eat the giant basket of tortilla chips they bring to the table. There's so much that I can't see them thowing away the ones that aren't eaten, meaning some of them were probably already on a couple tables before. Plus, they just waste real estate in your gut because of the main dish which is usually a lot.

You dont have to worry on that if eating at a Chuys.:)

Well, I guess I'm the exception. I have facial hair, and I can eat cheesy dishes of a variety of kinds without getting it in my facial hair. What my problem is getting stains on my shirt. No matter how hard I try, whenever and whatever I eat (which happens frequently as my waistline will attest) invariably a drop or even a gallon of something will end up right on a spot midway down my shirt. I even spill liquids, and most of them stain (coffee, tea, wine, etc...pretty much anything other than water.) Now, since I'm well past the age of learning new behavior or skills, I usually end of tucking a napkin into my shirt to cover it...no matter how hard I try, I can't manage to eat without spilling, and I've ruined a number of good shirts. While it embarrasses my wife, she finds that approach when we eat out preferable to my usual solution at home: taking my shirt off.

I think Jack uses his beard as a bib? :D

I just felt the need to post a photo of some red chile enchiladas:

I want to go to New Mexico and visit Lincoln, and eat enchiladas in the town of Hatch. Supposed ground zero of the perfect chile. I like green, but I think I'd prefer the red like you have there. Man that looks good!

Come on over!
Hatch isn't a very large town but does have several excellent places to eat.
The Pepper Pot is my favorite.

You come to Albuquerque and there are three places I'd like to take you to sample red. :) One is a James Beard American Classic Award winner.
