I enjoy making breakfast on the weekends. Yesterday was to be omelettes. We like them with the bacon and onions cut into small pieces and fried together and when done, the scrambled eggs added to the mixture.

Our favorite brand of bacon was not available when wife was shopping so substitute brand was bought. I cut the bacon into small pieces and started frying it. Within a few minutes, the bottom of the pan was covered in water! It took several minutes of boiling the water off the bacon before would fry. Never had this experience before so I looked at the list of ingredients on the package of bacon and the first item was "bacon cured with water".

How do you "cure bacon" with water? They just inject water into the meat so it will weigh more and they can get a higher price for the product. Anything to make a buck. I'm sure they are injecting other meats with water to make them weigh more too. Careful reading of ingredients before buying in now going to be done.

We normally only buy two brands of bacon. Menards often has Hormel 24oz pkgs of thick sliced bacon as a loss leader and it is about as good as Wrights, our usual brand. When Kroger or Meijer puts Wright bacon on sale, as they often do, we load the freezer. Applewood or Cherrywood are our favorites and always the 24oz thick cut package.
 
Wrights is pretty good for "wet cured" bacon. Our local store (Shop n' Save) has dry cured, which is what we usually get. You have to buy the whole slab (really top of the loin) and cut it yourself though.
 
The last package of store bacon that I bought..........

half of the strip was 75% fat and the better front part was only 66% meat.

I was really buying............. FAT !!

Deli bacon is going down hill, from the good bacon I had as a child.
It still has a good flavor but shrinks up, something terrible, even
over medium pan heat.
 
They been adding water to food products for decades. Unless you buy your bacon from a local farmer that you know you are going to get ripped off.

We have settled on "Farmland" bacon that we get at Hy Vee's. The apple or hickory smoked thick cut works very well for us.

We have bacon once a month whether we need it or not.

Yesterday I made the mistake of getting Hy Vee brand bacon and the wife was not happy. The only upside for me was that I get to nibble on her uneaten share the rest of the week.
 
I find that bacon may be the single most overrated food I have found. It seems like it exists on it's own plane in America. I don't hate bacon, it's fine. I never choose it because it's expensive and I don't get the value out of it. On top of that, it doesn't seem to be the healthiest stuff you can eat... not that I plan my diet around healthy foods.

More for everyone else I guess.

If someone offered me a beat-up but functional Model 10-6, 4-inch heavy barrel with no finish left on it but timing was good, and all they wanted in return was that I agreed to never eat bacon ever again for the rest of my life, I'd do that deal in a heartbeat.
 


I love bacon and have it for breakfast 5-6 days a week.
Mine comes from Salt Lake City and I buy it from the butcher.

I find that bacon may be the single most overrated food I have found....

If someone offered me a beat-up but functional Model 10-6, 4-inch heavy barrel with no finish left on it but timing was good, and all they wanted in return was that I agreed to never eat bacon ever again for the rest of my life, I'd do that deal in a heartbeat.

I don't want to rate the bacon, I want to eat it :D

If I had to choose between guns and bacon, I'd have to think hard for a while. I know, freedom and all that, but ... BACON!

As Patrick Henry famously said in 1775:

"Give me liberty or give me ... bacon! I want both, but definitely some of that bacon! And some eggs, and the biscuits look good too. Anyway, what was I talking about? Right, liberty ... "

They edited the speech a bit before it got into the history books.

The bacon I buy is from Salt Lake.

I said that Burgers was the best I've ever had.

So you didn't burst my bubble.
