I'm curious to see what people are getting, seeing or paying for freezer beef. I'm not talking store bought stuff. I'm talking those of us here who grow and sell direct to consumer or are a consumer who buys either by the piece from a local source, a package for the freezer or by the 1/4, 1/2 or whole animal.

So, if you're a producer, what area are you in and what are you priced at? Priced on the hoof or hook? Processing included or an additional cost handled between the butcher and the buyer? Dairy beef or a real beef animal? Dry aged? Length of aging?

If you're a buyer, what are you paying and is that direct to the producer or is that all in price after processing? Boneless or bone in? Vac sealed or paper? Dry aged or just hung a week?

Most Butcher shops etc. not only cut to order but also age the animals
for a top quality section of meat.

One shop here in Reno has aged Beef, that is almost, too tender, for me !!

Too many ways to order, so you need to call a dealer to find out the prices.

Bought from a local rancher last fall who's daughter is a meatcutter. $3.40 a lb cut and wrapped 1/2. Price paid on delivered weight. IIRC, steer was about 1275 lbs on the hook.

Cow was local to me, 30 miles from Butte, MT and slaughtered, hung and processed here.

Whatever the market price is the day the critter was taken to the locker. Plus processing fee. You want to buy a half of a half instead of a quarter so you get some of both the good and bad quarter. Some lockers can sell meat but most can only process the meat. because of more government regulation a lot of lockers have closed in the last few years. Now you have to reserve time over a year ahead to get space with the lockers around here.

I paid $2400 last summer for a Angus Semital cross that had spend 120 days in a feed lot, cut wrapped and frozen . Works out to a bit over $4 a lb. But, even the hamburger is top shelf, nothing added. I can get tongue, liver or tallow anytime from my guy at the Hutterite community I get it from. State of the art butcher shop. I suppose I spend a bit running a second freezer for a while. It last 2 teenage girls, wife and I a little over a year. But, we have BBQs, and I give some people burger for gifts.

Right now cattle prices are up from last year, so you might have to add some.

It is 12-14 months out, but I might feed this one out for slaughter. However, if when he reaches 500-600 lbs and will bring around $850+, will be very tempting to load him up and take him to the barn. He’s a day or two old in the pictures. Born last week.

Just paid $310 for 71lbs. of mixed cuts, inluding burger. I'm retired now, but used to ranch and wish I had today's prices twenty years ago. Of course, here we feed our cows and new born calves in the winter. Back when I did this, hay was $55/ton, today it is $300 plus. I guess prices go hand in hand.
