Ran by a few groceries looking for chilis,but all I could find were anaheims so I bought a few,fired up the Barbie and roasted em (love that smell) peeled and gutted em and gulped down 1/2 of one.That ain’t no Anaheim!!! 😂

Anaheims don't have any heat.

I used to split them and remove the seeds. Lay them flat and cook them in oil with a lot of garlic. Nice addition on a ham or roast beef hoagie.

King Soopers near me always seems to have jalapenos and habeneros in stock. I'm thinking the local farmers have something to do with that.
 
I was already to whine about the removal of their chicken fried steak from the menu.

My chili peppers did well this year. A warm, dry summer.
 
I love Chile Rellenos. My neighbor raised some of what were purported to be "hot Anaheims". They put jalapenos to shame. I was limited in how many I could eat and my wife and Grandkids only got a few bites down. Neighbor will not buy those seeds again.
 
My local Safeway used to sell chiles and they’d have a carton labeled mild,another mid and a third labeled hot,but you never really knew what you were going to get lol

Years ago I had the ambition to roast my own chiles on the gas grill. All I can say is CON CUIDADO, common Spanish for BE CAREFUL.

I had a particularly lovely large Pueblo chile that burst like a grenade while being turned, launching all that lovely flavorful juicy goodness into both of my eyes. Spent about a day and a half in bed with moderate degrees of remorse.

Now I go out to the farms, pick my chiles, and have them roasted by the bushel before taking them home. Rubber gloves while I peel off the scorched skins and prepare the chiles for freezing. Prior to a final and thorough hand washing DO NOT wipe your eye, DO NOT pick your nose, DO NOT casually use the restroom.

The secretions are generally known as oleo-resin capcicum (sp?), or OC, the basic ingredient in defensive products like pepper spray and bear spray. Depending on the specific variety of chile pepper the potency and concentrations vary, but all varieties are capable of causing severe discomfort.

I am happy to pay a few bucks more and have mine roasted before I take them home.

Pueblo, Colorado hosts the annual Chile and Frijole Festival every year about Labor Day. Farms in the area produce a wide variety of chiles for every taste. The farms are still producing now and the roasters are running all day every day.

A day without green chile is like a day without sunshine, and a day without sunshine is kind of like night.

My market sells serranos,jalapenos and those ones that look like little pumpkins (habeneros?).

I only buy the serranos when jalapenos are O/S. They don't do anything for me. I tried the "pumpkin" shaped ones one time. IMHO they should have a skull-n-crossbone sign warning to use sparingly.

I've made that mistake handling raw chilis but not with the roasted ones. I'll wait until the roasted chilis are just cool enough to handle and remove the skin under running water. Haven't had an accident yet but then I've been known to put the wrong end of a lit cigarette in my mouth. I do appreciate where you are coming from.
 
I too love a Chili Relleno and usually have better luck with a Poblano than an Anaheim. My buddies garden didn't do as well this year as last, I may find myself running across state to a pepper farm that allows pick yourself and reasonably priced, or not. My buddy gave a handful of what he called Serranos, whey were yellow and about the size of a Halapeno...they were HOT, let alone the fact that I forgot about the oil on the skin and rubbed my eye for some reason or another...bad move.
