Years ago, I once worked with an older fellow who said that he and his wife ate them when they were first married. They lived in a little bungalow out in the country...times were tough; they didn't have two nickels to rub together. He'd go out hunting during the winter and sometimes all he could find were jackrabbits.

From what I hear, they're pretty tough and stringy unless they are stewed for a few hours. Some people claim they have the consistency and taste of old shoe leather while others say that if cooked for a long time, they can be quite flavorful. I can't give an opinion inasmuch as I've never tried any. They're pretty much considered pests around here.

Crock pot is your friend. Most wild rabbits or hares are tough. I chicken fry them and simmer the in gravy in a crock pot until tender. Then boil some rice and a favorite veggie or two to go with them...and maybe some biscuits or corn bread.
