Does anyone have any experience with this combo? Catastrophic failures? I'm thinking about buying a box of DT for my 610 for woods/hiking carry. I'm a little nervous because it seems really hot to me.

A commercial ammunition manufacturer isn't going to exceed SAAMI pressure specs for the round. I know a lot of folks run DT in their 10mm Glocks, and I see the DT website lists the ballistics out of G20/29 firearms - all the way up to their 200gr offerings.
I've got a 610 and it's built like a tank. If a Glock can take it, I'd bet an N frame Smith can. I've never run DT ammo, but I wouldn't be concerned about it.

Not a problem. The 610 is basically a 629 with a cylinder and barrel bored for a 40 cal cartridge. Plenty of strength.
I have run nuclear level reloads through my 610's. They are extremely strong and can take a lot more then you can dish out. I will say that recoil becomes "signficant" with that power level though.
Don't sweat double tap. He stays within SAAMI boundaries so your gun will be fine.
The good news is Double Tap performed better than advertised. My first five shot group with 165 GD's averaged 1442 fps. Several individual shots after that surpassed 1475.
The bad news is that almost every round fired locked up my cylinder. I had to tap the cylinder on a wooden bench to open it. I have shot a few other kinds of ammo including 40 reloads and 10mm American Eagle with no real problem. I have noticed an occasional 'hitch' as the cylinder rotates but nothing else has ever locked it up. I guess I need to make a Corbon order.
