Green Chili Stew

I am so envious of the folks in NM who can buy frozen chilis any time they want to, i.e., the Bueno brand. Nothing like it in New England. I can get it, fedex'd to me from NM (I've done it), but the overnight shipping cost is goofy high.

Yes ! Green has arrived!
It's good with tortillas, cornbread , whatever you got.
I went went buttered crackers. A little melted cheddar on top.
All gone now!

The traditional side servings include some form of bread (tortillas or crackers qualify) with butter, a combination that serves to clear the palette and diminish the burning sensations of hot chiles. In Spanish we say "pan y mantequilla", literally bread and butter. Milk is also a good choice with the hotter and spicier dishes. Some folks prefer hot coffee. Hot chocolate is a very popular drink in traditional Mexican homes.

Personally, I prefer a cold beer. While travelling in Mexico I have noted that "cerveza fria" is widely popular (translated as cold beer). Fortunately, our southern neighbors have evolved sufficiently that cerveza fria is not just for breakfast, but may be enjoyed any time of day (or night).

Notice that the Hot costs more than the Mild, Dulce, Sweet.
Proving once again that it costs more to be Hot than it does to be Sweet!
Worth every Penny!
