How do you pop the "emblem" out of the grips? Can you just pop them back in once you're ready to reinstall them?

Where could I find new ones, plus the round metal part that holds them in?

You don't, the medallion and washer are riveted together. About the only place to find them is on E-bay or other auction sites, and they will be used parts. There is a source of plastic replica medallions some grip makers use, but I have no idea what that source is.

Why do you want to take them out? If refinishing the stocks just mask over the medallion and sand carefully around them.
 
I wanted to refinish a pair of grips. I just received them in a trade and they are in much worse shape than the pic showed. They have been refinished (and not in a good way) and some goofball got finish on the medallions. I thought maybe the medallions popped in and out.
 
If you are going to refinish completely get some Formby's stripper and clean everything off. Cut masking tape discs and stick them on the medallions before applying the new finish.

If all you want to do is clean the medallions, use a Q-tip with Acetone, Methyl Ethyl Ketone or Ethyl Acetate and carefully go over the medallions. All of hese are quite agressive so be careful to not get it where you don't want to remove the finish.
