How do you S&W guys roll?

Depends. When I pack my Browning HP I carry it on half cock chamber loaded. If things look like they are getting crowded and a gun grab is possible, I simply slip the safety on. If someone does get the BHP(I am not as young and strong as I once was) I want to see then try to figure out how to shoot the thing, while they are so engaged I have my 940 in a left front pocket for amusement.
Recently my agency has gone to the M&P full size .357 with thumb safety. Carry pretty much the same way locked an loaded. When the weapon comes out the safety comes off-always, and the real safety takes over. I know that if I want to stay for a couple more pension points I will probably have the switch to the M&P, but it really is a very good weapon. The 940 will stay however, or maybe my 632 Pro.

How fast can you get into action with it?

You are the first and only person I have herd of carrying at half cock. If I recall correctly some cavalry troops carried half cock. Way before my time. I have carried a P 38 round in chamber safety on or had it on a bed stand in that condition in the past.
I carry a 640 in my left front pocket also for the same reasons.
I have gained more interest in revolvers lately. I just got weary of the plastic "tools."
If you are concerned about a grab there are plenty of retention holsters available. I have never used one and am sure a lot of practice would be involved.
I no longer open carry, I have no reason to advertise in public.
Hunting and in the woods is a bit different though.
When I first got into Glocks and not many good holsters were available I had a soft suede IWB and carried empty chamber. Since I went to Milt Sparks Summer Special with its molded form and open mouth for re-holster it is round in the pipe. My HP and 1911 are condition one.
Be safe and aim true.
