Whiskey is distilled from wheat, rye and barley, but there is no possible way for the gluten protein to survive distillation. However, with cheap blends and some foreign stuff where gluten-based caramel color is used and additives are legal, that can be enough to affect some celiac patients.
There you go: Another reason to stick to straight bourbon and other good stuff. No reason not to anyways, unless you just want to get drunk
