Steak the way my wife likes it.

My wife was fully formed when we met. 34.
Set in her ways.
Ordered her steaks well done. Took quite a while to bring her around.
Tonight I was headed out to the grill, still having some things to get ready and told her the steaks would be ready in 20 minutes.
She frantically hollered, don't over cook them.
Now she likes them medium rare.
Sometimes I do win.

My mother in law used to tell the story of how when she first met my father in law he would always order his steak well done whereas she always ordered medium rare. When the meals were brought to the table, he'd look at her nice plump steak and his shriveled up steak and ask "how come yours is so much bigger?". She explained to him that she didn't have them cook all the juices out of hers. Didn't take him long to come around.
My dad always liked his well done. I've always liked mine on the rare side of medium rare. For my money, if you've seared it on the outside enough to get it warmed up all the way through it is ready.
 
I'm the guy that likes well done. However mine are still moist and yet crisp on the outside. The secret is: It takes almost as twice or three times as long as a rare stake and knowing how the cook! (long low temp and sear at the end!)

I ordered a "Well" stake at Smith & Lewinsky's once, the smart mouth waiter said they didn't guarantee "Well" done steaks. I told him Ruth's Crisp does (and they do!) and if you burnt my, steak they were cooking another one until it was right! I never got a bad steak! I have had the manager get me different waiters though! Go to Ponderosa and do the same thing, and you will get a cinder!

I like it red in the middle and juicy. With garlic and steak seasoning. A hot char-wood Fire so the outside gets that bark. Garlic bread for dipping in the juices. With a burnt on the outside baked potato. With Amish roll butter.

Both my wife and I like steak rare - medium rare.

My dad before he passed and younger stepson had to have them well done.

I do all the grilling as my wife burns everything on the grill.
 
My 4 year old girl doesn't eat much of anything. Very picky and unadventurous eater. BUT, every Sunday is steak-night, and I was amazed when she first gobbled up the steak I cooked just the way I like it - marinaded in Italian dressing and crusted hard with black pepper and kosher salt. Medium to rare to rare. If it's over medium rare she lets me know - "dada, I like crust with pink and juicy. This is too brown." Hahaha. Small victories in life.
 
I've always enjoyed my steaks rare, with one exception.

Out on the Central Coast of California, in a little town called Nipomo, there is a steak house called Jocko's. After a few trips there, I learned to REALLY enjoy their small 'Spencer' cut cooked 'extra rare'. I wouldn't do that anywhere but Jocko's.

My mouth is watering up just thinking about it!
 
Well, tastes will vary. I like 'em rare...de-horn it, shave it, cripple it and throw it on a plate. Especially prime rib. This will not change anyone's mind but here's a little idea that I believe says it all:

Beef gets it flavor from two sources, blood and fat. If you cut away all the fat and cook away all the blood what you have left closely resembles cardboard.
