Things you need to know if you move to the South

Well, we can discuss seafood once posters here have eaten at O’Steen’s in St. Augustine and Corkey Bells in Palatka. Well worth the drive. nuf sed.

When I lived in St. Augustine one of the guys I worked with who was born there, told me O'Steens only served steamed or boiled seafood. I like fried and never tried it.

Corkey Bells is worth the drive out to Palatka. A good friend just moved there, so even more of a reason.

And while we‘re on that topic: Oklahoma is not “the West”.

I once flew five hours eastbound from Oregon to a workshop in Oklahoma City. Super-nice people, but I was the only one who wasn’t from the South, and these good folks all thought they were in the West.

Dates back to the land run. Folks from the west settled the OKC area. Folks back east settled Tulsa.

And speaking of pronunciations--it is PAY nut.

Best hushpuppies ever had were in a small seafood place in Wilmington, N.C., sadly long closed. Back in late 90’s several friends rode with me from Tidewater down to go to shop in Wilmington. Took them to this place, one guy ate 2 baskets of hushpuppies by himself!!!!We joked him for years, called him the hushpuppy king. Many seafood places have really good ones these days.

But there was one Pie that she didn’t make.
That would be a Chess Pie.
But my Buddy Cecil’s Mother made it.
Usually served with a cup of Boiled Custard.
That’s Southern Egg Nog.
Turns out that Chess Pie is actually an old English recipe.
Apparently my English folks forgot how to make it!

My grandmother used to make a variant of chess pie she called Jeff Davis pie. It was delicious, or at least that's how I remember it. Wish I had the recipe.

Heyna? I'm gonna get a tray of pizza an' a couple two tree beers before I go up da Paupack to ice fish.

Da haitch is silent in tree.

Dere ain't no T in Scran'n.

Anthracite coal country venacular.

I never cared for RC Cola. I loathe Dr. Pepper (which, by the way ain't bottled in Dublin anymore)
The bottling plant in Dublin, TX still bottles various flavors of soft drinks. As they legally cannot bottle Dr. Pepper under the name of Dr. Pepper, they have a flavor called 1881 Red Cola, which tastes the same as.....Dr. Pepper

Then there’s the one about the Good Ole Boy who consumed way too many RC Colas and Moon pies.
This resulted in a Lower Body component had an eclipse!
Here’s a couple of Chess Pie Recipes from the Memphis Junior League Cookbook.
Yes, the Gun and Knife Guy who collects Coins and Hammers also has a Cookbook collection.

Got a 12-pack of Cheerwine in the fridge right now.

Never been a huge fan of grits, although I've eaten them all my life. I remember once we had some northeners down for a sales meeting at my company in Georgia. We were feeding them breakfast and I heard one say to his friend, "Never had grits. What are they?". His friend replied, "If you like the taste of salt, pepper, and butter, then you'll like grits". Pretty accurate, actually.

Actually, shrimp and grits are a big favorite of mine! Shrimp, butter, grits, garlic and Old Bay...mmmmm! My mouth is watering just thinking about it. I will also take it with some Cajun Andouille sausage if the boats ain't in.

And this needs to be mentioned as well - if you're from the South then you know the difference between "redneck" and "cracker". The two are NOT the same. If you are from the North then you might be scratching your head right about now wondering what a sunburn and a crisp biscuit have to do with each other...

O’Steens fries everything on their menu. Reason to eat there is they Change the frying oil Every Day, 2 large cooking oil tanks behind the place. One has old oil, other fresh oil. Many places use the oil until fried food is ruined.

You are also going to get directions like….go down the old highway road, not that interstate, and go past Johnson place. Take the first right at the corner where the old big oak tree was before the tornado.
