I didn't know what that meant, but I found out.
Then the person cooking it must have used old / burnt oil . Peanut oil is actually known for having a mild to neutral flavor .NEVER EVER. It taste funky. Had it like that once. Spit it out. I use regular oil for best taste.

An oil that might be more Southern is Cottonseed Oil. .
