Rusty, I have found very few who enjoy a PB&H as much as I do. Good stuff.
I cooked my first post-Mom era meatloaf tonight. She would have taken one look and turned up her nose. I may have used a bit much onion. Diced up a half a small white onion and added it to 2lb of 90/10 meat along with the other fixings. Going to be some good meatloaf sandwiches with some provolone thrown in.

Going to hike around Brazos Bend State Park with my camera and binoculars. Plan to pack a sausage sandwich and another with meatloaf for after I make a figure eight around the two lakes there.

Last night I pan seared elk tenderloin in a sage butter and made a cheesy spaghetti squash with smoked gouda, aged extra sharp cheddar and then topped it with a chipotle Panko crumbs.

Leftovers from my favorite asian joint. About a third order of General Tso's, with a couple pork egg rolls and some pan fried pork dumplings. A little honey to drizzle on the sides put just the right touch to it.
