i just had some Bueno frozen tamales. They are good.
Now for an apple salad desert.

Dice up an apple
Add some dried fruit. I'm using cranberries.
Throw in some nuts, chopped. I'm using pecans.
Mix in a little mayo/ salad dressing

You're good to go!

Have you tried candying the nuts?

A little water and sugar in a pan, slowly melt the sugar by gently swirling the pan, don't stir it, add the nuts, swirl to coat, then spread the nuts out on wax paper to cool.

Don't worry that they're stuck together, you can break them apart when they're completely cooled, and no longer tacky.

Oh yes. Candied nuts can be delicious. I especially like candied pecans.
Unfortunately, My doc has backed me off on sugar.
I was trying to get some healthy quick recipes going.
Us guys who live alone sometimes find it difficult to eat healthy. It's fairly difficult to find something that you can make quick in a small quantity.
That's what led me to the one Apple salad.
Lots of other stuff I make, like pinto beans and stew , I make a lot but I freeze it.
I'm heading down to Alamogordo. I will stop at the pistachio ranch and sample some candied pistachios.
Here in NM, we raise peanuts, pecans and pistachios.
Don't know if any other state raises all three.
