In the old country it‘s called “Sülze“ or, somewhat older, “Presskopf” (pressed head).

My grandma made it herself, and we used to have it with fried potatoes (although the attached is a stock photo from a German restaurant menu ;))

“Head” is still pretty non-specific. Especially since head cheese frequently has no head in it. My grandma used it to dispose of leftover roast, ham ends, and other “regular” food meats.

But in some parts of this country they apparently eat “hog jowls”. Now THAT makes me shudder. :D
 
There is a local market in Lorain, Ohio called Fligners. They have lots of good meats and one of them is headcheese. Bought some yesterday, and am going to make a sandwich with it shortly. Rye bread, lettuce, sliced cheddar or smoked Gouda cheese, onion, and mustard. Yummy. Oh, and a glass of 2% milk too.:)
Bawahahahaha, 2% milk with enough fat and cholesterol to kill a cow, that's funny.
 
Yep, when we buy a whole hog every year when they butcher here in Feb, we always not only have head cheese made, but also have jowl bacon made...we prefer to eat the head cheese with a variety of crackers and a good snobby craft beer or two. Good German butchers that love their business.
