Beef Tongue

If you have a smoker that is the way to go. Smoked tongue reminds me
spam in it's texture and makes great sandwiches.
I haven't been to the rodeo in Vinita, Oklahoma in years but they use to have
a calf fry eating contest the week of the rodeo.

As a kid in the Appalachian Mountains we were not wealthy enough to pick and choose. My mom had a nose to tail mentality. Nothing went to waste.
Tongue with mushrooms and onions is good eats.
And how about liver and onions? Any takers?

Nothing wrong with beef or calf liver and onions. I've also used elk liver for this dish; no wild flavor and you can't tell it from beef liver.
 
I wish beef tongue was easier to get, Walmart has it sometimes but $6.00 a pound is crazy. Where do all the tongues go? Dog Food??
Cooking, I follow the KISS method, crockpot an low for 24 hours or so., Toss in some bay leaves. let cool to room temp and pig out.
 
I was raised on Maine farm and no part of beef critter was wasted. Loved tongue, and liver was the best. Mom even used the kidneys. We were too poor to let anything go to waste. I was not to fond of red flannel hash, which was potatoes and beets ground up and fried in patties. Ate them though or went hungry!
 
I keep seeing Fred Sanford in my mind pulling a big tongue out of the pot and using it to lick envelopes or stamps- whatever he was doing on that episode- its burned in my mind.
 
Skin and "bone" the tongue, curl it up after adding "spices of choice" then put it into a close-fitting saucepan with a modicum of water, place a metal plate on top but inside the walls of the saucepan and weigh the plate down with something suitable (we used to use cleaned soup cans with stones in them). Simmer for around three hours adding water if necessary, then turn out and allow to cool. Known in the UK as "pressed tongue" and is excellent when sliced thinly across the "curls". Well cooked the tongue low and slow boil in salt water. Best sandwich I've had in quite a while.I have had it when younger living at home,but don't remember it being so tender. This won't be my last, maybe smoke next one.

Good for you. It is remarkable how many tasty foods this world has to offer if we can just get past the optics.
 
Mom fixed it a couple times growing up. I thought it has a very "beefy" taste. A good beefy taste. Very tasty with very little fat content. MUCH better than heart or liver. I may go pick one up and cook it up.
 
More than once, I've watched in amusement, as the young girls at the register recoil in horror when the reach for them. I even had a little checkout girl at Wal-mart flat refuse to touch it to even run it over the scanner. I had to hold it out for her to use the hand scanner and I had to bag it. I didn't make an issue of it, I just laughed and shook my head.
 
Any suggestions on ways to cook tongue? Split a side with son and I wound up with the prize. Thanks
No one is being honest with you, it's nasty!
Throw it in the trash and go get some skirt steak.
They serve that stuff in Texas in tacos and it taste like what I'd imagine rotten feet would taste like.
