The answer is "mathematics". They have no resemblance to matter as we know it. They did not exist at all until mathematics predicted their existence, at which point someone was able to then devise a test to detect them. Talk about your self-fulfilling prophecies.
Each time we inquire farther, mathematics predicts yet another elusive and ephemeral kind of particle. Eventually, someone devises an experiment that detects it.
Working the other way, realize that what we perceive as matter is nothing more than the result of concatenated layers of mathematical relationships, layered one on another until they become opaque to our senses, perceivable as what we call matter. This is why Buddhists say that the material world is illusory.
