Chicken Wings

Are boneless wings as advertised on TV the same thing as chicken nuggets? If not, how do chickens fly with no bones in their wings? If so, how did they get the bones out of the wings?

Ever have pitless olives? It's the same thing. They have a machine that cores out the bone and then leaves a slight hole in the end.

Then, they cook them just like regular wings. As they cook they shrink slightly, so the hole is not noticeable.

The real secret is that they simply must be fresh, not frozen chickens. Also, you need to realize that the cost is higher because you are buying 100% meat by weight, as opposed to getting the bone weight as well.

We've been doing it in Buffalo since the 1960's.

Chicken tenterloins are also used to make the "boneless" chicken wings.

Jim, I've never seen such a thing. Literally, a wing...which is DARK meat, that's deboned? I'd buy the HECK outta those. Perhaps it's a NY-only, or northeast thing? The ONLY 'boneless wing' nonsense I've every known is nasty breaded white-meat strips....bleh.

Chicken wings are white meat.

Chicken nuggets are ground up and reconstituted. Then battered.

Boneless wings are longer pieces of solid white meat.

Jacques Pepin makes "lollipops" Out of both pieces of a chicken wing. The bone sticks out like a handle and you eat the meat off. It is the closest I've seen to a real chicken wing that has been made boneless.

This in my opinion is the best video ever posted on the internet. It is Jacque Pepin making a Galantine chicken. The whole video is awesome. But the lollipop wings are right at the beginning. YouTube

Boneless wings made from breast meat are way cheaper per pound than actual wings and there's virtually no waste for the restaurants to deal with. That's some pretty slick marketing right there!

When I was young, chicken breasts were the premium cut and they were $3-$4 (all prices I'm quoting are per LB). Wings were considered "peasant food" and I remember seeing them priced at 39 cents.

Today, you can buy boneless skinless breasts for under $2. Bone-in skin-on breasts are $3-$3.50. They cook up juicier and taste better, but they're not as healthy. How is it that they can get away with virtually doubling the price, when they leave the skin and bone on?

Wings have become really popular and sell for $4/LB or more. They're about 1/2 scrap and not good for you, but they are yummy when prepared properly. According to reports, Americans will eat about 1-1/3 billion wings on Super Bowl Sunday. That's about 4 wings for every man, woman and child in the country!

I can buy whole chickens for $1/LB and it takes less than 10 minutes to cut one up. I understand convenience and the laws of supply and demand, but somebody is really pulling a fast one here!

Actually there are videos online on how to de bone a chicken wing. Is it worth it? I don't think so. More work than it's worth
You can watch the Hooters girl de bone a cooked wing but that's no fun.:) She can use a Hula Hoop as well. Hey it's a family restaurant.;)
