I Like Bacon

Once a month I cook up a pound of maple cured bacon and make two sandwiches.:)

Bacon is a food group. Isn't it?

Just in the process of rendering out 3 pounds of ends and pieces. About 2/3s is edible but all the rendered fat goes into to grease can in the fridge. Almost all fried food tastes better with a tablespoon or two of bacon fat added to the pan. Liver, fried spuds whatever. And if you are an oldtimer(like me) who still makes popcorn in a kettle, bacon fat adds a little smoky/salty flavor to the batch..

I buy good lean bacon also but sometimes the can gets a little low and I need to up the ante to maintain my supply.
