I switched from gas to an induction cooktop. I love it. Faster response than gas, residual heat comes only from the pan, not the burner. I bake bacon too sometimes. I put mine on a rack over a foil lined cookie sheet. Gets crisp faster when the grease drips away. Convection at 325.
