Red Beans & Rice

Do prefer to prepare the bean mixture separately and then ladle it over the rice or do you like the rice and beans all mixed together?
We bought some Zatarains in a box. I thought it was just gonna be the bean mixture, but the rice is all mixed in. I'm gonna have to make my own, I guess.



All mixed together - that gives the rice a bit more flavor!
PS: had this for supper last night. :D

Zetarains is pretty good for quickly stuff. It is even better if you add a teaspoon of Louisiana Hot Sauce. The red beans and rice should be all mixed together, at least that's the only way I have ever seen it. The best kind is the one you make yourself from scratch, but that can take some time.
 
Of course anything made from scratch is better...no argument but if all I want to spend is 20 minutes or so I like Vigo's red beans and rice, I prefer their Santa Fe Beans and Rice because it is quite good without adding anything extra to it. I get hungry for ham hocks and beans from time to time because I ate alot of that when I was a kid, mom used whatever beans we had on hand, even them big ole red kidney beans. Once I made a big ole potful with two or three smoked ham hocks, onions, garlic...it got to smelling so good I started eating it before them pinto beans got fully cooked, they was still a little on chewey side but man was they good going down. Later that evening I started getting a terrible ache in my side, under my short ribs and eventually I let loose this tremendous bowl blaster of a fart, my wife came in the room and told me she had a customer coming over and could I take that downstairs. I was in misery, it would not stop and I was unaware of the awful smell I was putting off. My wife said when the gal came in the door, she sorta jerked her head back like in recoil, my wife was very embarrassed, I stayed in the basement.
 
Always severed separate, over rice. Skip the box or canned beans. The beans must be soaked overnight prior to cooking. Cook for a few hours with onions, garlic, bell pepper, celery and parsley. Then add some salt and black/red pepper.I prefer to add the sausage on top when severing, like the Piccadilly. But any good seasoning meat will do, pork sausage, salt/pickled pork, or cubed ham will work fine. Always good with cornbread (no sugar of course), or French Bread. Greens make a good side as well. Good any day of the year, but best served on Monday, every Monday.

I have never ate red beans & rice. I want to make some. Are red beans the same as kidney beans?
 
I see no valid use for red kidney beans, but the small red beans are tasty and versatile.

I like black bean soup, and the Cuban Moros y Cristianos--black beans and rice--can be a most wondrous thing.

But then except for the too-sweet kidney type, there aren't many beans I don't love with rice, barley or millet. Or cornbread. Perfect, synergistic protein, cheap and healthy.

But now I need to make some red beans and rice for Monday. :)
