Thanksgiving Dinner

It's gonna be all the traditional stuff. I just finished the dressing which will be reheated tomorrow, canned cranberry sauce, steamed asparagus, gravy for the turkey etc etc. But no potato's of any kind. Instead we are having Risotto Parmesan.
I had risotto for the first time about two months ago. Loved It!
It will probably become a holiday staple here. :cool:
 
Can't imagine not having mashed potatoes with turkey gravy. A nice home made roll and home made cranberry sauce. Home made pies and the turkey has been in its brine since last night. This is going to be so good....
 
One thing i do miss that i havent had at any holiday dinnersince late 70s and late 80s--was my Grandmothers Karo Syrup Pie. Sounds gross but it aint.I also miss my other Grandmothers Corn Soufflet.
 
I'm going to season my bird real soon and tomorrow cook it in my Orion cooker which does turkey well and fast too.
I made my wife's fancy potatoes yesterday with creamed cheese, sour cream and other goodies as well. Simply reheat tomorrow.
Cornbread stuffing was also made ahead of time and waiting in the frig now. I shucked corn this early fall and cooked it half way in butter and put it in the freezer which is also now thawing.
If my family goes away hungry tomorrow it's their own darn fault.
 
Yesterday, I made a pumpkin pie, using a homemade crust.

Today, I roasted butternut squash. It will be served in a casserole topped with toasted marshmallows. I also cooked up some lingonberry sauce.

Tomorrow, I will make roasted turkey, sage dressing, and gravy.
 
I suggested a great recipe I have for roasted potatoes with fennel (real rustic), but my wife "pooh-poohed" it for tomorrow. We always have a turkey breast and a london broil done on the grill. Fixin's are pretty traditional. Desserts are pecan pie and chocolate mousse.

Followed by the holiday nap.
 
Wow no potatoes. We're having mashed potatoes for the turkey crowd and German potato salad for the ham crowd. We also made potato dressing, which is and old family favorite from my mom's old Watkins cook book from 1945. We've been getting ready for several days and we're looking forward to tomorrow. Ya'll have a great Thanksgiving
 
Plans are all up in the air. I haven't cooked Thanksgiving dinner in years, probably since my wife died almost nineteen years ago. Both my kids and their families were coming in from out of town and had made reservations for dinner at one of the downtown hotels. But my daughter's oldest child is sick, they may not be coming at all, and the hotel deal is off. My son and his family and I will figure out something. His three boys (the eldest is sixteen) can digest rebar if necessary. :D:D
 
I cooked the turkey yesterday in the gas grill, in the wind and rain, using a turkey cannon. I then deboned it, put the meat in large sections in a coupla large ziplock bags in the fridge, put the carcass in a large pot to make stock, and will put the meat in the oven at 350, on a rack in a covered roasting pan, with the stock, for about 45 minutes late this afternoon.

Today's a beautiful day, Thanksgiving, and all I need do with the turkey now is pull it out and slice it up. I have giblet gravy, too, that I made two nights ago when I put the turkey in the brine. (I think that the traditional giblet gravy is the hardest part of Thanksgiving prep, but I skipped it one year for an easier gravy but it was nowhere near as good.)

Meanwhile, the wife is making pumpkin pies, mashed potatoes, garlic bread, oyster stew, salad, and veggie sticks and dip for pre-dinner finger food. Plus some other stuff, no doubt, which I forgot. Plenty of soft drinks,juice, beer, wine, etc.

Got a bunch of young folks showing up and we, by gum, are ready!

It is a lot of work, to be honest, but I remember all the times I visited my parents or aunt and uncle for Thanksgiving, and now feel it is our turn.

I took the day off work today to go to the church and roast 4 turkeys stuffed with dressing for dinner tomorrow. Got them into the oven around 10 and finished boning them out and putting the meat in the cooler at 6 tonight. I'll be back there early tomorrow morning to throw the meat in the oven to heat it up, start cooking some hams, make the gravy and cook the beans. We're expecting about 70 folks that have no family close by or a better invitation. It will be a great time!

We never have potatoes on Thanksgiving. They're just too much of an everyday thing. We have glazed sweet potatoes, all the gravy goes on turkey, dressing, and rolls. I made the sweet potatoes today, and a pumpkin pie. All I have to do tomorrow is whip cream and load it all up. Turkey down, everyone.
 
Someone mentioned an Orion cooker further up the thread, that and the Big Easy Oil-Less fryer are great options for producing a well-cooked turkey.

I'm going to be spatchcocking, dry-brining, and applying a savory rub to the bird tonight, and it goes in the Pit Barrel cooker tomorrow.

Sides are still up in the air, as my wife isn't up to cooking right now, so I'm waiting to hear what I'll be cooking.


I did pulled pork for my work crew yesterday for lunch, and will be doing braised lamb shanks for the kids and g-kids on Saturday. Then we'll collapse on Sunday :)
 
Wow, BruceB, I haven't cooked braised lamb shanks in years. They're hard to find these days, and pricey when I do find them, but that can be some fine eating. How do you do them?

Finally figured out to make the dinner in stages through the week. Started on giblet gravy Monday, jalapeno cornbread/wild rice stuffing on Monday, mashed garlic potatoes Tuesday. Last night cooked the bird and finished giblet gravy. This allows me to taste test the turkey, just for everyones benefit.

Today- reheat eat and relax, then root for the Eagles.
 
My wife is a happy camper with all three son's home and a few neighbors coming ala pot-luck. I, unfortunately, will spend a non-existent holiday in Korea with kimchi. :-) Not whining but I do miss the gang every holiday I have not been home. I will fly Christmas Eve day and be able to enjoy that time with the gang. Pork tamales will await...
 
I love risotto, and I love to make it. Haven't had it too much lately, but it goes well with porketta, which has been a Thanksgiving staple for me for years. Porketta cured my stepdaughter's terrible eating disorder* a few years back, so now, if we go to her house, I can count on her to make it.

Conchita and I are bringing the turkey, which is a matter of complete indifference to me; I'm looking forward to the porketta. Dunno what the young lady is fixing for sides, though. Linguini carbonara would be my first hope, but it would not surprise me if she came up with a nice risotto. She has a lot of Italian ancestry, and it shows in her cooking.

Hey Ron--unrelated to Thanksgiving but--if h=you havent started watching COMBAT yet--skip to the episode called: Col. Clyde.It has Keenan Wynn in it and is hilarious. I dont want to spoil it for you by saying anything else. That was one of the best episodes of the entire series IMO. Shecky Green gets to really shine in that episode.

PS, Bialos wants his K Rations back.....and his batteries...
