What's for dinner?

No photos tonight. I didn't stop eating long enough to snap any.
Pork carnitas in a warm corn tortilla, red beans and rice and crispy fried corn chips and salsa.
 
Could it be?????????? Leftovers from last night.
 
Still feeling guilty for what I ate yesterday ….. so this was perfect!

Time of year for special diet after gorging on corned beef and cabbage. Up here only available before Easter. Black jelly beans. A whole bag of black jelly beans. Nutter Butters for desert.
 
After paying $9.95 for catfish fillets last week, this week danged store has "catfish nuggets" already breaded and seasoned for $2.99 lb. The nuggets are just small misc pieces. But OMG good!
I added an extra shake of Cajun seasoning. Between that the Iowa made Templeton Rye I'm feelin' a bit too good!!
PS, this is my 2nd plate!

My wife's gone, need to eat. Oh look, leftover rotisserie chicken. Let's find something to go with it....

Frozen green beans, that'll work. Look for the microwave time and there's no microwave directions!!!! Just stove top. Wait. It says "Birds Eye Skillet". "Saute Ready"...whaaattt!!!!???

Whip out the electric skillet. OK what else can go with this...ah! a single red potato. Dice that up and get it going in some olive oil, diced garlic, salt, and pepper. Then dump in my "Saute Ready" frozen green beans. There's like a sauce in the bag that's a frozen puck. Eh, I can live with it. Cook it all up and toss in the chicken just to warm it up. Dinner time. Pairs well with the $4 Sauvignon Blanc I use for cooking.

Bonus points if you recognize the table.
