What's for dinner?

There is a Mexican food place over near where my best friend lived when he was still around. Family owned, and been there at least 30 years. I still go by every now and then for old times sake and because the food is damn good. Last time I went I ordered the Gallito plate. A couple pieces of tilapia and a few shrimp all grilled in a spicy pico de gallo sauce. I make fish tacos out of it using their wonderful homemade tortillos. I brought home half of the meal and stuck it in the freezer. A couple months later now, I thaw it out and heat it up. Was just as good as the first time. Spicy enough to get the sinuses going and make a little sweat on the head. I don't think even my cardiologist would object to this meal.
 
Christmas Traditions are growing where I come from. Must have a spiral sliced ham from the Honey Baked Ham Company. We ordered ours on reservation to be picked up and paid for today. Told the wife I'd go into town to get it if she would make potato salad, and boil corn on the cob if I could find any.
Know it isn't Christmas yet, but we had Honey Baked Ham Company's spiral cut ham, corn on the cob, and potato salad still warm as a teaser tonight.

We did Christmas tonight with the kids / grandkids . We had a Honey Baked Ham . VERY disappointed . Way too much fat .

Unwrapped my boneless pre-sliced honey baked ham from New Braunfels Smokehouse this afternoon. I worked on both the end pieces while I was bagging up the extras for refreezing. I am going to be eating GOOD ham sandwiches for a while after the holidays.
 
I am fortunate in that, over the years, my oldest daughter has perfected her knock off version of Honey Baked Ham. We have it several times a year. Traditionally we serve it with baked beans, corn on the cob and my mother's warm potato salad.

The torturous part is smelling it all day as it bakes.
 
In preparation for the holidays, last couple nights have been that healthy green tea mixture. Spinach, cucumbers, apple, banana, fresh ginger and lemon blended up real good. Doesn't look real good in a pic, but healthy.

Right now a prime rib is in the oven, scrapple unthawing and pork roast in freezer for New Years Pa Dutch style sauerkraut.

Had to skip the oyster stew, just too expensive at 21$/lb for bulk shucked frozen oysters this year

I usually trim the fat off of a Ham that I buy,
mostly if it is a shank, section, befor cooking.

Same with pork ribs.

Very few houses trim the "over fat", from their meats, befor wrapping & shipping
due to the extra cost, involved.
