What's for dinner?

Instant Pot Chicken and Rice.

We're having a favorite from our RV days. Cooking in an RV can be a bit of a challenge. The Instant Pot is very convenient because it's sort of a one-pot meal and doesn't heat up the RV. Most of the recipes are pretty simple, and the Instant Pot doubles as a slow cooker and has other features for soups and chilli. Very versatile.

I forgot to post this yesterday and it was not "dinner", but for a kinda late lunch, I had this and it was delicious! I heard about it from a neighbor, and decided to splurge. Apparently Harris Teeter, a local relatively new grocery store, offers this special every Thursday.

@Rusty1953, I also like hot sauce. I don't know if you have ever seen the Hot Ones Youtube videos, but a lot of celebrities take the Hot Ones challenge. It's pretty funny.

All the Hot Ones hot sauces are available at the Heatonist Hot Sauce webpage (easy google for the link)

I've tried a lot of their hot sauces and they are all excellent.

I have stated before that the two most precious liquids on earth are beer and sriracha and I loves me some burn and endorphin rush.

But, as to hot sauce challenges, I won't cauterize my tonsils to prove a point.
 
Last night was kind of a last minute deal when I fell asleep while making some beer battered cod in the oven and it was trash. Just got it out in time to keep the smoke alarm from going off for very long. So I looked into the freezer and got the bacon fried rice that I got at Meijer's, "Innovasian" brand, nuked it, nuked a bag of snow peas, and then nuked a hunk of cod. Not a bad dinner at all. A friend had basically done the same thing with shrimp and he, as he always does when he eats anything good, complained about heartburn. I shouldn't laugh, but I do, at all my friends who eat anything greasy and pay for it.
 
Game day! A roast chicken with mom's stuffing. Mashed taters, from the garden, home made gravy. Some cranberry sauce, washed down with Champagne. The first Thanksgiving of the year, after this momentous week.
 
Tomorrow night...barbeque Baby back ribs momma making tater salad with lots of HB eggs...and some kinda green stuff. string beans or Broccoli got both in the fridge
 
Father in Law was a WVa born country boy. Cornbread with sugar was Johny cake..and he liked white meal corn bread...with rotten milk...buttermilk. What he grew up with..Born in 1899. After he came to live with us he had to eat Jonny cake...One day he got white corn meal and made some of the cr** he thought he liked...never heard another word about johnny cake....Long sweetening was molasses...short sweetening was honey..didn't have sugar

can i ask for the time and temp to smoke the quarters? Have a bunch in freezer from $1/lb special.

These were about a pound each and took around 1 hour 45 minutes at 250 degrees until internal temp (probe) reached 165 degrees. Took off, wrapped in foil and rested for 5-10 minutes).

Recipe called for the rub under the skin but, evidently, I did it my way.

Thank You!, it be appreciated. Do some wood smoking, but only tried chicken (whole) once
