They look very tasty!

can i ask for the time and temp to smoke the quarters? Have a bunch in freezer from $1/lb special.

These were about a pound each and took around 1 hour 45 minutes at 250 degrees until internal temp (probe) reached 165 degrees. Took off, wrapped in foil and rested for 5-10 minutes).

Recipe called for the rub under the skin but, evidently, I did it my way.

For dinner last night I cooked braised mock boneless short ribs (chuck roast)

Tonight, my wife prepared for us, baked potato, roasted asparagus, sautéed mushrooms and onions, all to accompany some elk loin steaks she had marinated in a juniper berry, red wine, garlic and pepper marinade. The marinade was reduced to a sauce and served over the elk. A delightful red blend complemented the meal.

It is the first time I have had elk that actually had flavor and satisfied me. It was the sauce. Elk by itself is rather much like lamb or veal to me, in other words, without flavor. But tonight, out of the park.

Saw Chick-fil-a was offering a chicken sandwich for lunch or dinner on Veterans Day.

I went to my local Chick-fil-a and was told this franchise does not offer anything on Veterans Day. So I left.
