Good Evening!

I just got back from seeing my quack. He did a couple stupid tests. The results are in. He confirmed, I am stupid!

Thanks for all the positive feedback. I pray everyday for him to become a Good Person, A Good Husband, And A Good Father. And in that order. LOL so enough of this depressing stuff.

And I'm starving! All this fried okra stuff is making this ole country boy hungry! I LOVE fried okra! I can eat stewed okra. But it has to be cooked right and with stewed mators, onions, etc. but I'm not a big fan. But do eat it. Kinda like stewed squash. It has to have bacon grease, onions salt and pepper. But I really like fried squash! I'm a southern boy, I'll eat most anything fried!

And, no body mentioned fried green tomatoes! Another Southern Delicacy. My Mother used to make the best, in her ole iron skillet, that I still have! I'm the only one that eats them in our household, so I don't cook them often! I Love Fried green Mators. And do order then occasionally when we eat out, if they serve them. But 90% of the time they're soggy and gross. I like my okra, squash and green Mator's battered and fried CRUNCHY and Crisp.

I'm hungry!

Good evening drifters it's 97 in the desert tonight. Now you folks are saying we have to watch out for Rheas and geese, is there no end to it all.

To be honest, I am more worried about hordes of or even one EPA, Bureau of Land Management, DOJ, CDC, USFS, NPS, AMA, NWS, journalists, librarians, others who can't be mentioned here, assorted other gov'mnt agencies, including state derivatives who all change their policies, rules, etc. when the wind changes, temperature changes, or one of the uppers in each gets a brain fart !
Animal hordes are easy, we all know how to handle them, down to the last slash or joke! 😗
The others are death by a thousand paper cuts from faceless, brainless elitists, without common sense or any sense of land, water, history, or a good companion!

When I was a teen I'd go crabbing and take my catch to my grandmother. She'd make okra and tomatoes, mix in lump Blue Crab meat, serve it over rice, and have cornbread on the side. I'd eat until I was one bite away from exploding. :D

It's OK if you do not like okra, that leaves more for me. :)

Sounds good, but fried soft shell crab, on good bread as a sandwich with lettuce and tomato, as a dinner served with fries, or onion rings, or just a pile of fried soft shell crabs with a good cocktail sauce as a vegetable 😄 , and cold beer of choice! 😇

BTW fried oysters, same ways as softshell crabs, is either 1rst, 2nd, or a tie ?

Each year we go camping in the Hills, my son brings me a jar of pickled Texas okra !

Tonight we are slumming 😏 , BBQ ribs, gator salad and beans, same as last Thursday! 😍

Archie, my TWH, said today it is diet time for me, or maybe I walk back???? 😛 Both counts!

Danged tourists, driving along, creeping down the road sight seein'.
Didn't get there in time to get one of the "good" bikes.
Still got a great workout.
Just finished eatin' my sirloin steak. Yum.

Tourists don't mention that word to me, now that the season is here, they cut our bag limit down to two.

Now back to C. Homer Bast, CO USS Yolo in the Philippines, preparing the ship for the next mission with a scheduled departure date of September 1, 1945.

July 8, 1945

Even though the weather is bad, the presser and drier, waiting here for two months, came aboard. The liberty party arrived back on board well beered up. For the first time in all these many months words were exchanged between the blacks and whites. I informed the officers to tell the men that the "old man" would not tolerate racial barbs. Dietz is selling his pictures for a quarter each and on shore they bring two dollars. The sailors flush with money, will buy almost anything from a war zone. Just learned we are under AdComPhibsPac.

Mr. Belmont, who took Kerr's position, is young, just out of ND and from NJ. He is an economist with a good logical brain with ideas. Just a comment - while here he and his department have the most to do. His job is a responsible one! The ship, while not a taut one, could not become one for the officers are too lax on their men. But the ship is one that must have discipline. Our rules, which are few, must be obeyed. I too want obedience. Certainly this ship is an easy one on which to live. I am sure it is a happy ship!

Two of the boys on a dare wrote the clerk of the court in Yolo County, California and informed him we wanted a pin-up girl from their county. The combined camera clubs, held contests and will send pictures of a number of contestants by the 17th. Judged here, notification will be sent to Yolo County.

July 14, 1945

The crew really worked this day. The mail from Tacloban arrived this morning. Following lunch, I called on Captain Peterson once again. He is very sympathetic in his attempts to obtain further authorization for the cargo hatch and winch. I found a winch on one of the barges and asked the maintenance people to look at it; it cannot be used. A bright spot appeared - mail brought an AlNav which listed the promotions to Lt (jg) - Kinley, Ambrogi, Cardin, Belmont, Bracken and Selke all moved up in rank. They were thrilled even though it was expected. This was a lively Saturday involving a movie, bridge and dinner in my cabin because of the changes in the wardroom. BuPers sends to us from time to time a number of paper backs. One was "Mr. Chips". He is my idol in a romantic way. He devoted his life teaching boys to be men. He had a deep feeling of a job well done when his boys climbed to heights unknown. I am convinced that I want to teach. Although I would never be a scholar, I believe I would be a good teacher.

July 15, 1945

It is Sunday and holiday routine but no church service. I slept a little late and waited for a ComPhibsPac doctor to come aboard for an inspection. He found everything well organized and perfect and left with the words, "a mighty clean ship". Hats are off to Mr. Belmont and others.

Bum boats, the native canoes, pass within hailing distance now that I informed the OOD to keep them away. Several crew on one of the stages painting some days ago yelled that they wanted some pom-pom. Within a short time the canoe came back with four girls who asked to come aboard--the price $15--even have supply and demand here. It rained in torrents this afternoon.

July 20, 1045

It is much cooler today and we have all kinds of water, even enough to take a shower this afternoon. From time to time I argue with the "Mustangs" (Navy enlisted men who are now officers) about the Navy way of doing things. They get out of sorts when I do something my way. On occasions, I blow up and tell them off, but I look at the overall picture of the ship and all men. The ship's readiness is my concern.

The movie is a repeat, but the boys couldn't care less. I am con¬vinced we have a happy ship. One must remember that the early days were ones when the inexperienced attempted to become experienced. They lived in confined quarters for the first time. It was essential they be molded into one. We have done that!

It seems the drift denizens north of the Mason-Dixon are not enamored of Okra. I'm inclined to agree, so far, but haven't thrown in the towel yet. When in Rome ...
Don't know about squirrel gravy but my husband had squirrel stew on his menu, before I came along, though bushy tailed rat is verboten at my table.
A local woman put some Red-eye Gravy on my grits. It's bacon fat, coffee, salt, and pepper. It tasted like a shortcut to heart problems.

Mmmm, all this catching up has got me hungry. So, I stoked up the charcoal grill and threw on a few hot Italian sausages, a grillin pan for veggies full of sliced red onions and fresh green peppers. Got salted taters cookin on the stove and I'm gonna finish off the macaroni salad I made on Monday!! Oh and pop the top on another Canadian bier. :D

Did someone say lard?

When I was little (I was born in 55) everyone used lard. They fried in it, they used it in biscuits. They seasoned with it. My Grandmother kept a ten pound lard can handy. They called the lard stand? And the best biscuits I've ever had! And she'd fry me some diced Tators, skin and all in lard. Half would be crispy, half well done. And she always kept a bottle of hot sauce on the kitchen table! A couple of biscuits, big helping of fried Tators, a big glass of iced tea. A splash of hot sauce, I had a meal! No microwave involved. Just good ole country home cooking! In a cast iron skillet or a covered iron Dutch oven with Lard. There was always something to eat at Granny's. Day or night! A pot of pinto or white beans was always boiling! With ham hock. I still have her rolling pin!

They always said back in the depression, she'd cook rabbit, squirrel, Racoon, deer, bear, even possum! They would catch a possum and put it a covered wooden barrel for a couple weeks and feed it corn? Yuck! But that was way before my time! Back then, they hunted for 90% of their meat and raised chickens and raised and slaughtered and smoked their own hogs for the rest. Momma said many time, they had biscuits, fried chicken, fried eggs and gravy for breakfast. Chickens that Granny killed that morning. Momma was born in 1929 and raised in East (Cocke County) Tennessee, Game was plentiful. They moved here to Nashville after WWII. My Grandfather got a job after WWII as a over the road truck driver. And made good money after that. They had 9 kids. Momma always said Thank Goodness he was on the road all the time, or there might have been 15-20 kids. LOL No body went hungry at Granny's!

Then in the 60's everyone used Crisco. In the can. Then in the 70's everyone started using vegetable oil.

But, you can still buy lard. Mexican cooks use it all the time.

Like stated, Healthy NO, Good Flavor YES!

Chuck
Dude's name is Bubba. I wouldn't peg him as a physicist or neurosurgeon anyhow. Could you imagine that?

"We need our top man to verify these settings to avoid a nuclear chain reaction that could initiate the apocalypse. Better call Bubba."

"This is a very sensitive area of the brain. One mistake and the patient will spend the rest of his life in a vegetative state. Dr. Bubba, we need your expertise to perform this surgery."

Just pretend this is hwitty.
