As much as I love it, I only buy and eat bacon about twice a year. I buy a 3 pound pack in the winter and again in the summer. We just had BLT's with most of the bacon and some beautiful tomatoes. One slice nearly covered the entire sandwich. I didn't take pictures of them but here's a shot from last year.

Took the rest of the bacon this morning and had it with an onion omelette. A little cantaloupe to make it feel healthier and some chocolate milk to wash it down and settle everything.

Yes, I still drink milk. It keeps my stomach in balance. ;)

I got the bacon a little too brown. It was so lean, it scorched in the pan. I had to add some bacon drippings from the fridge to aid in cooking. These are some of the brown pieces-they were still tasty.

Good eating and filling. :D:D

We had bacon, tomato, and avocado sandwiches on Sunday. Delicious! Like the OP, we only purchase bacon 2 or 3 times per year, enjoy it for a few meals, then we are content until the next urge strikes.

One of my long time favorites uses the bacon grease in the skillet to brown some sausage, then make a cream gravy with the drippings. Really kicks the biscuits and gravy up a notch or two! Fried egg on top, step back and give me some elbow room.
 
Wobbly, so the ends touch when suspended on a fork. While spending a bunch of time in Canada on a regular basis ten years ago or so, I asked our local butcher about the "Canadian Bacon" thing. He said there is no such thing as "Canadian Bacon", what we are talking about is Shoulder Bacon. I would look through his meat counter and find these large chunks of very lean bacon and snatch them up. He said that stuff doesn't sell, Canadians in general like their bacon fatty....whereas most Americans like it leaner. Those lean chunks were what was left from the shoulder at the point.

I never met a brunch I didn't like.
