What is Your Absolute Favorite Dish?

Shrimp scampi with linguini I make.
Only thing I don't do is make the pasta or catch the shrimp.. :)
1 pound linguini
4 tablespoons butter
4 tablespoons extra-virgin olive oil, plus more for drizzling
2 shallots, finely diced
2 cloves garlic, minced
Pinch red pepper flakes, optional
1 pound shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
1/2 cup dry white wine
Juice of 1 lemon
1/4 cup finely chopped parsley leaves
Italian crisp crust bread to dip with.

Elk steaks pan seared in garlic,butter and white wine. Remove steak when cooked just past rare, add more wine to deglaze pan and reduce for sauce.
Riced garlic potatoes, olive oil roasted Brussel sprouts and a nice loaf of crusty Tuscan bread. Not traditional with good red meat but this dish pairs well with a nice glass of Zinfandel.

There is a little family owned place that my best friend and I used to go to a couple times a month. They had something they called the Gallito Plate. Two big fillets of fish cooked in a spicy pico de gallo sauce. I always left off the beans and doubled up on the spanish rice. Four big tortillas to wrap it all up in for some da.....rn good fish tacos.
 
I'm a simple man.

Beer brats
Venison burgers and tenderloins
Filet mignon (french bs spelling)
Skirt steak
Lamb chops
Ham
Quail

Potatoes or onion rings or sweet potato fries
 
Used way too much butter when grilling onions in a skillet to top off the bratwurst.
I skewered some jumbo skinned shrimp that were brushed with butter and Old Bay along with some of the biggest white seedless grapes I'd ever seen. Never would have thought of grilling grapes but they looked inviting. Inspiration struck and I used the onion flavored butter for a baste. The coals were fading so nothing got hot enough to char or burst. The shrimp were great but the grapes blew me away.

And here I was stuck on frozen grapes.

I had Brats this evening. No grapes. Barley and Hops. ;)
 
My favorite foods depend on where I am. If I'm in another city I need to find a good Reuben for lunch. If I'm at the inlaws' retirement place in Mexico I gotta go to "Karla's" on the beach for Diablo shrimp.

If I'm cooking and I have time I like to make jambalaya or my grandma's green bean soup. I hate using sauce or soup from a jar, I need time to do it from scratch.

If I'm eating a steak I like a simple New York with no fat on it, and a sprinkle of Montreal steak spice. Rare is almost too done.
 
1) Escalope de Veau Fontinella from a tiny restaurant outside Brussels. Served with pommes frites and a green peppercorn mushroom cognac sauce.

2) Fresh ceviche, on a boat, in the Middle Grounds. The first fish in the boat gets a filet cubed and dumped into a jar of salsa with lime juice. Shake, wait 3 min, and eat with tortilla chips.

3) Smoked brisket. ��

Crawfish and shrimp Cardinale vol-au-vents, portabella risotto and sautéed asparagus.

Sorry, Sal, that hot pastrami sandwich has been haunting my dreams. :D

Most delis here have catered to the health freaks, and gone to low-fat pastrami and too little of it. Same with corned beef sandwiches. A travesty.

Decent gumbo is easier to find here.
 
Not really a "dish" per say, but I would have to think my all time favorite food would be prosciutto. If you've never had it, seek some out, most grocery stores have it these days. It's basically a very thin dry cured ham... but indescribably savory and delicious!!
 
Semi-boneless rib eye steak. Well done.
Cut green beans soaked in vinegar.
Mashed potatoes. (no gravy)

Desert: An extra helping of steak.

It is hard to beat a well-marbled ribeye, medium rare and seared so the fat is crispy on the outside, with a side of linguini with butter and cheese and a Caesar. Add a lobster tail and I am in hog heaven.

If anything can top that, it has to be full of seafood, like a bouillabaisse, cioppino, or maybe paella. I am pretty happy if I can get some barbecued shrimp in garlic, rosemary and hot oil, as my sister does it or the very similar dish at Pascal's Manale in New Orleans.

I might settle for comfort food from my youth, tenderloin about 5/8" thick, pan-fried in butter, with a deglaze of Worcestershire, red wine and capers.
 
Some of my favorite dishes to make are grilled Mahi Mahi with mango avocado salsa and coconut rice, carne asada (I have the best marinade recipe if anyone wants it), fresh cracked crab with artichokes and an ultimate favorite, SUSHI.

Here is a picture of a sushi dinner I made. One of my favorite sushi rolls I make is sauteed ****ake mushrooms with nigori saki and a drizzle of sweet soy paste. John makes his own smoked salmon which makes delicious rolls too with sliced red pepper, cream cheese and spicy Kiware sprouts. Fresh cracked Dungeness crab (that John catches) for CA rolls. We go all out for sushi. :) :p :cool:

I like almost everything, but even the best meal I'd get sick of pretty quick if I had to eat it everyday.

Because of that, my all time favorite meal must be fried eggs with runny yolks. Been eating them almost daily for most of my life, and I'm not sick of them yet.

On the subject of meals I love but get sick of, I'm starting to crave corned beef, smoked shoulder, and cabbage. St. Patrick's day is just around the corner!

Wife and I, love, Polish Sausage. "Kiełbasa Polska" & Kugelis, a Lithuanian grated potato casserole, copiously topped with a mélange of melted sour cream and sautéed onions, bacon and bacon drippings. Instant Heart attack, but "Oh...So Good!"
