A chunk of beef rump rubbed with brown sugar, onion powder, garlic powder, smoked Paprika and Chinese Five Spice (Karen can't eat anything spicy so no chilli or cayenne pepper). Placed in a crock pot with some beef fat and half a cup of water and left in the fridge overnight.
Cooked on low for 7-8 hours with onions, chunky potatoes and carrots added after 3 hours or so.
Open up a tin of peas and use the liquid from the meat and vegetables to make a gravy.
Dinner tonight and roast beef sandwiches for lunch for the next few days.
