Today was prime rib, twice-baked potatoes, fresh green beans steamed with bits of bacon & onion, fresh yeast rolls, and Martinelli's sparkling cider to wash it all down. Christmas cookies and mint chocolate chip ice cream for dessert.
For you Texans out there: Mass quantities of Corpus Christi native Mrs. swsig's wonderful King Ranch Casserole. It was accompanied by mass quantities of Shiner Beer. Perfect.

Christmas Eve - Tamales
Christmas afternoon - 2-rib standing rib roast - there are only two of us, and there is enough even for the visitor if we have any "orphans" in the building. We did a few years ago when the power was out for days, but I did have a stovetop (only gas one in the building) - ever done a rib roast in a dutch oven by candlelight? Hot roast beef in a 25F room raises everyone's spirits. It became a tradition.

Remember Buford (Bubba) Blue's ramble about shrimp in Forrest Gump? Technically I believe any seven of those would qualify. The number of seafood dishes equals seven. Any true Italiano out there please correct me if I'm wrong.
My wife's family would have baccala, calamari, spaghetti with clam or shrimp marsala, cocktail shrimp, anchovies in the antipasto... you get the idea.

I screwed up and didn't get the fish tacos made Christmas Eve=just had baked Wahoo with chips. Christmas was a Costco ham, potatoes au gratin, Brussels sprouts and a home made apple pie!
The Feast of the Seven Fishes (Italian: Festa dei sette pesci), also known as The Vigil (Italian: La Vigilia), is an Italian-American celebration of Christmas Eve with meals of fish and other seafood. There are many variations but basically, it is seven different dishes made with some kind of seafood in it. This year I made a white fish stoup with clams and mussels, stuffed baby squid, shrimp cocktail , bacon wrapped scallops and fried smelt.
