What's for dinner?

Tonight it was leftover beef enchiladas (home-made with corn tortillas). Topped off with sour cream and Herdes guacamole salsa, and a handful of corn tortilla chips on the side.

IMO, enchiladas are a prime example of a dish that is even better the second time around. :D

Visited a small restaurant/takeout this afternoon.
Couldn't resist trying their shrimp and snow peas with rice. First time.
 
A giant bowl of chefs salad topped with crispy fried chicken.

early St. Patrick's Day. Not to mention consternating those who dislike root veggies and the butter police!

Corned beef, cabbage, carrots, turnips rutabagas, parsnips and baked potato.
The good restaurant aren't doing their excellent Irish stew so had to improvise.

Had corned beef and cabbage a few days ago. Flat cut CB was on sale at Kroger for $3.99/lb.
I made corned beef hash yesterday using leftovers, with potatoes, carrots, onion, parsnips and rutabaga. Topped it with some poached eggs. Yum!

My wife picked up a corned beef at Winco for $3.99 a pound, but since I have a men's meeting tomorrow night, we won't get to have it until Tuesday night.
She cooks it up with cabbage, carrots, onions, and potatoes. I'm looking forward to it!
I've never had a rutabaga. They're kinda' like a turnip, aren't they?

cross between cabbage and turnip, but sweeter when cooked. And they turn orange when boiled. Never had one till moved up here where a lotta Swedes were settlers.
