What's for dinner?

Last night for supper I had the second half of the omelet I made for breakfast. It was a specialty omelet I developed myself with sauteed mushrooms pieces, 3 eggs, a shot of reduced fat milk, a garlic and salt spice mixture, shredded mixed cheese, sliced gouda cheese, pepperoni slices, sliced peppered turkey cut small, and plated with Tony Chachere Original Creole Seasoning. I get two meals out of the recipe.
 
Tonight, it is home-made Zupa (a soup made from Italian sausage, bacon, potatoes, and greens) and Parmesan, garlic, cheese bread toast on the side. YUM!

BC38, I ordered a To-Go order from the Olive Garden a couple of weeks ago. Normally, I get their salad as my first course, but it was kinda cold outside so I decided to get soup. As I was looking at my choices, I saw this "Zuppa Toscana - Spicy Italian sausage, fresh kale and russet potatoes in a creamy broth." and decided to give it a try. It was FANTASTIC! Not only that, but you get a huge bowl of it in a To-Go order. So I know your dinner was great!

I wanted to post a picture ou roast but the new "Update" to my PC messed up my picture downloading. I finally got it fixed today and here is a picture of the roast.
After four meals on it, I am really ready for some "White" meat, or even salads, even though it was cooked, perfectly.



I hear ya. I ate country ham for days. Gave some away. Now, the remainder is in freezer. Sandwiches for the year.

I didn't take any pictures of it, but we roasted an absolutely fantastic prime rib for dinner last night. Twice-baked potatoes and green beans with bacon on the side.
The prime rib was cooked to perfection. It was the best I've had in years. Even better than the prime rib dinner I had for our anniversary last month at the Davenport Grand (one of the nicest restaurants in town).

Our version of a Shepherds Pie. Ground turkey and sweet sausage. Carrots, peas, corn, onion, celery, mushrooms. Cauliflower and parsnip mash (rather than potato) on top with sprinkle of paprika.

We had shepherd's pie at the Bar Association lunch meeting today.
My little cousin catered it and it was great.

My wife made me clear out the frig, to give her more room in it for some odds and ends that she wanted to buy.

After four hours on the Treager at 325*, it finally showed 160* on the temp stick
and was ready to come into the house, to be carved up.

I think that we will have some left overs for sandwiches ?
