Chile Time in NM

Stopped at nearby Albertsons and they were roasting Chile out in front!
Bought some, came home and made my Simple Green.
Ground Pork, Salt- Pepper, garlic, onions and Green Chile.
The Brand of the Chile?

Good eating; I buy quite a few pounds this time of year. I blister the skins on the grill, peel the skin, wash out the seeds, and freeze the chiles. They keep very well frozen for at least several months.

If you've never been to the Festival in Hatch (I think it's Labor Day weekend) it's worth the trip if you're not too far away. Lots of various hot sauces, etc., that you won't find anywhere else, not to mention the fresh green chiles you can buy in large burlap bags.

Tennexplorer and I drove through Hatch several years ago on our way to the SWCA meeting. They were being aged on the roofs of the houses and you could sure smell them.

I always make a chili ristra with the Hatch peppers when they finally get here. We use them in various recipes all year long. They dry pretty quick around here.
 
I used to live over ABQ way.
Many people have not tasted the differences in NM vs Mex food.
Since moving to Nevada, I have only found one restaurant that does real New Mexico style food.
Carlito's on Sunset in Henderson (Near Green Valley intersection.)

I miss NM and the food so much. Texmex here in Texas is trash in comparison.

I've been eating Mexican food regularly since the '50s. I don't recall eating any bad Mexican food, whether it's New Mexican or TexMex. Both are delicious, just seasoned differently.

I guess that will work....... ?

Here in Nevada we like to break in a pot of chili at the X-mas tree cutting
as the #1 get together, in the snow, with family members.

October is when I try to get my chili testing done, so it is some good stuff, later on.
As I get older , I tend to wander on what goes in the pot, or my taste buds are changing?

More "Red stuff" !!
