Mustard version?
Have had just about every type of BBQ and still say Eastern N.C. is best for me. For Beef its a toss up between Texas and Chicago.
When we lived in Charlotte, NC, we learned about eastern North Carolina BBQ at a small place called "Bubba's BBQ". Yeah, what a unique name for a BBQ joint!! Ha! We had no idea [moving all the way out there from Arizona] that there were so many different styles of BBQ. Eastern NC BBQ is a vinegar based thin sauce with a little heat added in, and it sure hit a home run with my wife and me. Yum!
We later moved down to Rock Hill, SC, and a guy I worked with was a native S. Carolinian. He raved about a special BBQ place in Colombia, SC that was famous for their SC yellow mustard based version, and we didn't care for it at all, but that,s ok, too-kind of like some guys like a Ford- some like a Chevrolet.
That was one of the things that was great about living down south- so many BBQ places and "fish camps".
